1,152 sq inches of cooking surface on the main shelf and an additional 550 sq inches with second shelf. The ¼" thick main chamber and firebox help to hold heat in all climates.
Dual, tall and curved smoke stacks provide excellent draw and also give a choice for low or high draw through the cooking chamber for different affects.



A long single door allows for cooking of a whole pig up to 70lbs. This demonstrates the advantage of a smoker 24” in diameter rather then the standard 20” in diameter.
When not cooking a whole hog, insertion of the second shelf significantly increases the cooking capacity for large groups.

Heavy duty ¼ inch construction allows for cooking in all types of weather as shown here cooking two Atlantic salmon in the midst of a Midwest winter.
Dual smoke stacks with dampers are used for maximum control of temperature. A utility shelf with a locking rod can be pulled into place or released to fold back against the cooker if necessary to wheel through narrow openings. A 24" X 30" log rack is located directly beneath the smoker. Two inch drain with cap allows for a reservoir of water to be held in the bottom of the main chamber for moisture, and later drained for cleaning out the main chamber Stainless steel air cooled handles provide for comfortable opening of the main chamber.
Stainless steel 3" thermometer is standard.
PCC paint protocol consists of 1300 degree paint.

Using a charcoal basket as pictured here allows for a much longer burn time without the need to add additional charcoal. The basket can be placed lengthwise or sideways and gives you an opportunity to move the coals closer to the main cooking chamber or else back toward the firebox door for greater flexibility in cooking techniques.
